The vines at the Waipara Springs Winery are among the oldest in the Waipara Valley, a factor that contributes to the depth of flavor of the wines produced here. The grape varieties grown here are Riesling, Sauvignon Blanc, Chardonnay, Gewurztraminer, Pinot Noir, and Merlot. The wines produced at this winery are sold under two brand names: Waipara Springs itself, and Premo, each offering different flavor profiles. Visitors are welcome to sample the wines at the cellar door and to stay for a meal at the restaurant, which utilizes fresh, seasonal produce sourced locally. Travelers either visit independently or on organized wine tours from Christchurch.
Waipara Springs Winery is about an hour’s drive north of Christchurch, along State Highway 1. Visitors can either join a guided winery tour that includes this winery among others, or drive themselves there.
Waipara Springs Winery is open every day of the week, except on public holidays. Normal hours are 10am till 5pm, with the later closing time of 8pm on Thursdays and Fridays. The Waipara Valley hosts the annual North Canterbury Wine & Food Festival in March, and is a fun time to visit the area.
Another hour’s drive northwest of the Waipara Valley, along State Highway 7, is the resort town of Hanmer Springs. This place is known for its thermal pools with mineral properties. Visitors can soak in a pool for the day, or stay at a spa resort. It’s an especially nice place to visit in the winter, as the warmth of the pools contrast with the crisp outdoor air.
