Overview

Get an introduction to the local culinary styles of Genoa in this introductory cooking class. A professional chef will guide you in the preparation and the history of the three typical dishes, you will conclude your cooking lesson with a delicious lunch with the products you prepared. In this cooking class you will learn the preparation of these traditional foods: - Genovese Pesto, the worldwide known sauce, made of fresh basil’s leaves grounded with pine nuts and other ingredients in a marble mortar with a wooden or marble pestle. - Fugassa cö formaggio, a typical delicacy with an ancient origin back to 12th century from the area of Camogli and Recco. You will be guided by the chef in the preparation and the stretching of the dough in two thin layers that you will fill with prescinsêua, a typical soft cheese. - Canestrelli, a local flower-shaped biscuit with a hole in the center. This mouth-melting cookies are simple but tasty traditional sweets, something not to miss!

    handmade biscuits from Torriglia (small village on the beautiful hills behind Genova). Shaped as small flowers and prepared with simple ingredients

    This was one of our favorite activities that we did throughout our entire 3 week trip! Juliana was very friendly and helpful throughout the class. We loved learning how to cook from Bernardo, the owner of the restaurant. He was hilarious and helpful, and made the experience such a joy. The food was also delicious! We would happily take another class with Bernardo, and definitely would dine at Locanda Tortuga if we had more time in Genoa.

    Our hosts were amazing! Very friendly and gave us many secrets to Italian fare. We were given recipes, websites and a morning of delicious food. I would recommend this experience to anyone.

    Our tour guide Veronica was fabulous. The chef that worked with and taught us couldn’t have been better. I would highly recommend this tour. In addition to learning some wonderful recipes, we learned a little Italian along the way.

    We loved this cooking class in Genoa (Genova). The Italian chef and our guide who spoke several languages articulated the process and made our small group feel welcomed. Each of us took turns making pesto from scratch along with the pasta noodles, focaccia bread, and cookies aka biscuits.

    Great Experience! The guide, Giuliana was very sweet and accomodating as we were late and caught in traffic. The chef was very friendly and entertaining. He was very helpful and gave everyone a great deal of personal attention. Definitely a highlight of our trip.

    We had a very fun morning making pesto and eating focaccia, a unique pasta, and rolling out cookies. We made pesto from scratch in a mortar and served it on the pasta and it was delicious. Although the chef was delightful and his restaurant was great, we did not actually make the dough for the cookies or the focaccia.

    We had an incredible time at the cooking class. We cooked 4 dishes with the restaurant owner, who is also the Pasta Master Chef. We also had a guide from 'Do eat better experience', who told us more about Ligurian culture and food during the class. It was really fun to make Foccacia, learn some tips from the Chef and eat all these tasty dishes. The class was organized in the building that was originally built in the 11th century, which made the whole experience more authentic. After the class our guide walked us through the city to get some ice cream in Gelateria. We are very pleased with the level of service and how good the event was organized. We highly recommend to take this class for everyone who wants to have a fun time in Genua.
