Hear the history of Louisiana’s soulful cuisine, including the melting pot of cultural influence that distinguishes Cajun and Creole dishes.

Watch as your guest chef prepares famous dishes such as gumbo, jambalaya, and crawfish etouffée, learn traditional techniques—such as the importance of a good roux—and the variety of unique spices that give classic Louisiana fare its distinctive flavor. Enjoy local anecdotes, storytelling, and interesting facts from your chef—and if you want to know the (slight) difference between Cajun and Creole food, just ask!

After each live cooking demonstration, indulge in hearty samples paired with tasty local beer, iced tea or coffee. Leave with a better understanding of food and some recipes to take home and perfect on your own!

Our demonstrator, Chef Pat, was entertaining and knowledgeable about the food she was preparing as well as the historical and cultural influences on New Orleans cuisine. We had a great time listening to her "lecture" and watching her at work. The food was delicious, and we sat with some other attendees who were quite friendly.

I brought my family to the demonstration as I had such an amazing experience the 1st time I went 6 years ago. I was so impressed with the instructor and my family enjoyed the experience and talked about it for the rest of the day. It is a must do while visiting NOLA!
Great Choice!!
Diane_S, Apr 2024
We debated actually cooking & eating or watching a demo and eating the meal. For us, watching Chef Mike D and learning so much Louisiana history was the right decision! Eager to cook these recipes for our family at home in Ohio!!
Must do in NOLA

Dianne was great, the food was delicious and I really loved and appreciated the food history information! Highly recommend it- and try to do it before you explore the cities cuisine- it may change how you enjoy it! Makes you a mini local expert for gumbo jambalaya and pralines.
NJ visitors loved it

What a great demonstration, Cindy really knew her cooking and history. Hubby (not a cook, likes to eat) loved it too. Come hungry, it’s not just a tasting. Have already recommended to friends.
Must do for any seasoned NOLA visitor.

Pat was extremely engaging and knowledgeable not only about the cooking of creole/cajun foods but the history of them as well.
"A Must Attend"
Sonya_B, Apr 2024
I've taken this class 4 times over the years. Everytime I come to NOLA I take one. I love the chefs. The history, folklore, and personal stories are interesting and funny. I seem to learn something everytime I go. Each class provides me with a different chef and each Chef's stories are somewhat different and told with a different flair. Not to mention the food is delicious and the receipes are excellent. I've tried each of the recipes once I returned home and they came out exactly like what I ate in the class. The accents are fabulous and they add a "Jene sais quois!"
Great food!
Lucille_J, Apr 2024

Kathryn_J, Apr 2024
It was a cooking demonstration and comedy show all in one. Harriett was a hoot and I am looking forward to using her cookbook that I purchased. She kept us entertained the entire time and laughing most of the demonstration. Food was so good and I love that they give you the recipes.

Learned about preparing gumbo, jambalaya, and pralines. Learned a lot about Creole and Cajun history. Interesting, good food. You just watch, no hands on, but entertaining and well worth the ticket. You get enough to eat, including a beer to call it a meal Parking is pricey..$48 for 6 hours so prepare
